Take a load off. You’re going to have to sit down for this one. Imagine this: I’m craving some cold ones from Uncle Billy’s but I don’t want to have to drive all the way to Barton Springs. That would take five minutes too long. Instead, I walk to my fridge, grab a can of my favorite Uncle Billy’s brew, and enjoy the game from my couch. Now, that’s possible. Which brew would you most like to see in a can?


Eulogy for a Pecan Tree

“If trees could talk, this one would have plenty of tales to tell,” exclaims new reporter David Scott from Austin’s KXAN. It probably eavesdropped on many conversations and saw patrons come in studiously and walk out, swaying from left to right. It was a smart tree – It knew craft beer, Texas Bar-B-Que, and nothing else.  It provided ye with shade and acted as the perfect centerpiece to the Uncle Billy’s patio in the hot Texas summers. In October, it was the mark of a safe haven from the ACL crowds.


This wouldn’t be the first time someone has fallen onto Barton Springs Road.

On May 2, 2013 our beloved Pecan Tree fell to its death, too soon after occupying S. Austin for 350 years. High winds and the soft and wet Earth forced it to go down as majestically as it had stood for so many years. Thankfully no one was physically hurt, but the same can’t be said about the little piece of our heart that broke that day. Not only did it block traffic, it blocked our will to drink on – well, at least for a moment.


Good thing no one was in the loo. That would have been awkward.

While it cannot be replaced, Uncle Billy’s management is still deciding what to do with the remains that will put the tree to good use. Our last words: Your legacy is much like that of an artist, noticed and acknowledged posthumously.

Our head brewer Michael Waters has announced a special cask tapping at Uncle Billy’s Barton Springs – January 18th.

The beer of honor will be the Green Room IPA, a beer that is hopping into the spotlight as a new favorite. The brew is a dry West Coast style IPA w/ a bright citrus character and a hint of the dank.  We’ll be kickin’ it in The Green Room, January 18th – who’s with us?!

We’re updating you with a special TRAIL OF PINTS edition of EXTENDED Uncle Billy’s Beer Week. From now until Christmas eve, we’ll be featuring $2 “Swifty” half pints ALL DAY. Choose from the following of our hand crafted brewskis:

Axe Handle Pale Ale

Ax Handle Pale Ale is a “West-Coast” pale ale. Hopped generously during the boil and “dry
hopped” after fermentation, the flavor and aroma are all Simcoe hops (apricot, peach,
passion fruit, mango). The ale finishes with a firm bitterness and nice malt aftertaste.

Hell In Keller Pilsner

This is our traditional German-style unfiltered Pils (hoppy, golden lager).
We use all German ingredients. It has a firm maltiness and finishes clean and dry.

Hop Zombie IPA

Taking the hops one step further than the Pale Ale, our IPA is
aggressively hopped with Amarillo hops, including “dry-hopping”.
The resulting ale is loaded with hop aroma, flavor and bitterness.

Agave Wit

Agave Wit is an unfiltered Belgian‐style wheat beer.
We add Organic Agave nectar, orange peel, and crushed coriander
at the end of the boil to give it a unique, refreshing aftertaste.


A German style pilsener with Slovenian hops. 5.5% ABV

Sgt. Stedenko

A West Coast style Hoppy Red Ale. 6.5% ABV

Gold Rush

A highly hopped Belgian style Golden Ale. 6.8% ABV

Saison #1

A Belgian style Farmhouse Ale. 6.3% ABV

Bottle Rocket Lager Takes Gold at GABF – Voting for Austin Beer Guide Begins!

Howdy beer drinkers and ‘que lovers! It was a busy October for your Uncle and now we are well on our way to the holidays. We have to admit – Christmas came early for us this year! On October 10th, our team of beer crafting/drinking aficionados traveled all the way to Denver, Colorado to compete in the Great American Beer Festival – a beer loving convention that needs no introduction. After duking it out with some of the best beers and breweries from all over the country, Uncle Billy’s was crowned the Gold medal winner in the “Kellerbier or Zwickelbier” category for the Bottle Rocket Lager.  How sweet is that?

If you haven’t checked out the Bottle Rocket Lager, here’s the lowdown on our award winning suds:

Bottle Rocket is our German-style Helles. We use only German malt and German hops to create this refreshing, yet flavorful lager.

Brewing Specs
Original Gravity : 12°P
Alcohol : 5.1% by volume
Bitterness : 22 IBU

October Honky Tonk Happy Hour Lineup

A new month means a new music lineup at Barton Springs’ Honky Tonk Happy Hour. From 2-6p on Saturdays and Sundays, we’ve got free live tunes and $14 pitchers for ya. October is cooling off a bit and in our opinion, it’s getting to be perfect porch-sittin’ weather… you can relax on the patio all afternoon and barely break a sweat! A foreign concept for us after months and months of summer sun. Come on out and enjoy!

October Cask Night

It’s the first Tuesday of the month… also known as CASK NIGHT at Barton Springs! Join us this evening as we tap a cask of Insomniac Coffee Stout, brewed with coffee from local Austin Java. The firkin tonight is our espresso version of Insomniac, so plan to order some of each to compare!

Caffeine buzz plus alcohol buzz? Double score!

Cask Night will run all evening, or until we run out! Best to swing by right after work, just to be on the safe side.

What does this mean? Obviously it’s time to guzzle some craft suds. Pretty convenient that NDBD falls on a Friday this year, although let’s be real; everyone at Uncle Billy’s tries to celebrate the spirit of this holiday every day.

Anyway, in honor of this momentous occasion, we’re taking $2 off all tasting flights all day long at Barton Springs. This means you can swing by after work (or during work!
